Crispy Fried Enoki Mushrooms

Crispy Fried Enoki Mushroom
Light, golden, and perfectly crunchy with a savory, slightly spicy batter. Quick to fry and incredibly addictive, they make the perfect snack or appetizer with your favorite dipping sauce.
Ingredients
- 2 packs Enoki mushrooms
- 1/2 cup potato starch
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1/4 tsp white pepper
- 1/2 tsp salt
- 1/2 cup cold water
- Oil, for frying
Instructions
- Cut off the root ends of the enoki mushrooms and slice them into three equal sections.
- In a large bowl, whisk together potato starch, cornstarch, garlic powder, paprika, cayenne pepper, white pepper, and salt.
- Gradually add the cold water, stirring until a smooth, thick batter forms.
- Heat oil in a pot or deep skillet to 350°F.
- Dip each cluster of enoki mushrooms into the batter, ensuring they’re fully coated.
- Fry in batches, being careful not to overcrowd the pot, for 2–3 minutes or until golden brown and crispy.
- Remove with a slotted spoon and drain on a paper towel–lined plate.
- Serve hot with your favorite dipping sauce.
