Crispy Fried Enoki Mushroom

Light, golden, and perfectly crunchy with a savory, slightly spicy batter. Quick to fry and incredibly addictive, they make the perfect snack or appetizer with your favorite dipping sauce.

Ingredients
 

  • 2 packs Enoki mushrooms
  • 1/2 cup potato starch
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1/4 tsp white pepper
  • 1/2 tsp salt
  • 1/2 cup cold water
  • Oil, for frying

Instructions
 

  1. Cut off the root ends of the enoki mushrooms and slice them into three equal sections.
  2. In a large bowl, whisk together potato starch, cornstarch, garlic powder, paprika, cayenne pepper, white pepper, and salt.
  3. Gradually add the cold water, stirring until a smooth, thick batter forms.
  4. Heat oil in a pot or deep skillet to 350°F.
  5. Dip each cluster of enoki mushrooms into the batter, ensuring they’re fully coated.
  6. Fry in batches, being careful not to overcrowd the pot, for 2–3 minutes or until golden brown and crispy.
  7. Remove with a slotted spoon and drain on a paper towel–lined plate.
  8. Serve hot with your favorite dipping sauce.
