Miso Soup

A light and comforting Japanese soup made with savory dashi, miso paste, soft tofu, and seaweed. Quick to prepare and deeply nourishing.

Ingredients
 

  • 2 cups water
  • 1 tsp dashi powder
  • 2 tbsp miso paste
  • 1/4 block soft tofu, cubed
  • 2 tsp dried seaweed
  • Scallions, chopped

Instructions
 

  1. In a small pot, add the water and dashi powder. Stir until the dashi powder dissolves.
  2. Bring the mixture to a light simmer, then immediately turn off the heat.
  3. Add the miso paste, using a small strainer to help dissolve it.
  4. Add the cubed tofu and dried seaweed. Stir gently for about a minute until the seaweed rehydrates.
  5. Garnish with chopped scallions and serve warm.
