Creamy Sesame Peanut Noodles
Noodles tossed in a rich, nutty sesame-peanut sauce with garlic, soy sauce, rice vinegar, and chili oil, then topped with crispy tofu, scallions, and crushed peanuts.
Ingredients
Noodles
- 1 pack instant or wheat noodles
- 1 tsp grated garlic
- 2 tbsp sesame paste, or tahini
- 1 tsp low-sodium soy sauce
- 1 tsp rice vinegar
- 1 –2 tbsp chili oil
- ¼ cup noodle cooking water, adjust for consistency
Toppings
- Crispy tofu cubes
- Chili oil
- Crushed peanuts
- Scallions, sliced
Instructions
- Cook the noodles in boiling water according to package instructions until chewy. Reserve some noodle water.
- In a bowl, combine garlic, sesame paste, soy sauce, rice vinegar, chili oil, and ¼ cup hot noodle water. Stir until smooth and creamy.
- Add the cooked noodles and toss until fully coated in sauce.
- Top with crispy tofu, an extra drizzle of chili oil, scallions, and crushed peanuts.
- Serve immediately and enjoy.
