Creamy Sesame Peanut Noodles

Noodles tossed in a rich, nutty sesame-peanut sauce with garlic, soy sauce, rice vinegar, and chili oil, then topped with crispy tofu, scallions, and crushed peanuts.

Ingredients
 

Noodles

  • 1 pack instant or wheat noodles
  • 1 tsp grated garlic
  • 2 tbsp sesame paste, or tahini
  • 1 tsp low-sodium soy sauce
  • 1 tsp rice vinegar
  • 1 –2 tbsp chili oil
  • ¼ cup noodle cooking water, adjust for consistency

Toppings

  • Crispy tofu cubes
  • Chili oil
  • Crushed peanuts
  • Scallions, sliced

Instructions
 

  1. Cook the noodles in boiling water according to package instructions until chewy. Reserve some noodle water.
  2. In a bowl, combine garlic, sesame paste, soy sauce, rice vinegar, chili oil, and ¼ cup hot noodle water. Stir until smooth and creamy.
  3. Add the cooked noodles and toss until fully coated in sauce.
  4. Top with crispy tofu, an extra drizzle of chili oil, scallions, and crushed peanuts.
  5. Serve immediately and enjoy.
