Beef Pepper Rice (Pepper Lunch)
A comforting one-pan dish made with beef, rice, sweet corn, and a savory peppery sauce. Easy to make and deeply satisfying, it’s great for quick lunches or cozy dinners.
Ingredients
- Sliced beef ribeye
- 1 bowl of cooked rice
- 1/4 onion, thinly sliced
- 1/2 can corn, drained
- 1 tbsp unsalted butter
- Scallion greens, chopped
- Black pepper, to taste
Sauce:
- 1 tbsp minced garlic
- 2 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp honey
- 1/2 tsp black pepper powder
Instructions
- In a small bowl, mix together the minced garlic, light soy sauce, dark soy sauce, oyster sauce, honey, and black pepper powder. Set aside.
- Heat a cast iron skillet over medium heat with a little oil. Add the onions and cook until softened and translucent.
- Push the onions to the center of the skillet and place the cooked rice on top.
- Arrange the sliced ribeye around the rice.
- Sprinkle the corn over the rice, add the butter, scallion greens, and a generous amount of black pepper.
- Drizzle the sauce over everything, mix well, and cook until the beef reaches your desired doneness.
- Serve hot and enjoy.
