Brown Sugar Boba

Chewy homemade tapioca pearls simmered in a rich brown sugar syrup for a sweet, caramel-like flavor. It’s a fun, satisfying treat that pairs perfectly with cold milk or your favorite tea.

Cook Time: 1 hour

Ingredients
 

Tapioca Pearls:

  • 1 cup tapioca starch
  • 1/4 cup dark brown sugar
  • 1/3 cup water

Brown Sugar Syrup:

  • 3/4 cup dark brown sugar
  • 1/2 cup water

Instructions
 

  1. In a small saucepan, dissolve brown sugar in boiling water.
  2. Add 1/4 cup tapioca starch and mix well.
  3. Turn off heat, add remaining tapioca starch, and stir to combine.
  4. Transfer to a working surface and knead until smooth. Work quickly as the dough hardens as it cools.
  5. Roll the dough into a sheet, cut into small pieces, and roll into balls. Dust with tapioca starch to prevent sticking.
  6. Bring a pot of water to boil, add tapioca pearls, and cook for about 20 minutes until they float and become translucent. Drain and transfer to an ice bath.
  7. In a pot, combine dark brown sugar and water. Bring to a boil.
  8. Cook until the mixture thickens slightly.
  9. Add cooked tapioca pearls and continue cooking until the mixture reaches a syrup-like texture.
  10. Add about 4 tbsp of brown sugar boba pearls to a glass and rotate to create streaks.
  11. Add ice and your favorite type of milk.
  12. Stir well with a straw and enjoy!
