Everything can be cooked together in one little pot, making it a quick and easy way to satisfy a hot pot craving while still getting that warm, bubbling hot pot feeling.

Spicy Mini Hot Pot

A cozy mini hot pot filled with all the fixings simmered together in a rich and spicy broth.

Ingredients
 

  • Sweet potato vermicelli noodles
  • Enoki mushrooms, trimmed
  • White stem bok choy, cleaned and separated
  • Tofu puffs
  • Fish balls
  • Frozen dumplings
  • Thinly sliced hot pot beef short ribs
  • Spicy hot pot soup base, to taste
  • 2 cups water
  • ½ cup milk

Instructions
 

  1. Prepare the sweet potato noodles, mushrooms, bok choy, tofu puffs, fish balls, dumplings, and sliced beef, and set everything aside.
  2. Add the spicy hot pot soup base to a medium pot over medium heat. Cook briefly until warmed through and fragrant.
  3. Pour in the water and milk, stirring to combine with the soup base. Bring the broth to a gentle simmer.
  4. Add the ingredients to the pot, starting with anything that requires a longer cooking time, such as frozen dumplings and fish balls. Arrange the remaining ingredients in the broth.
  5. Cover and gently simmer until the dumplings and fish balls are cooked through, the noodles and vegetables are tender, and the beef is fully cooked.
  6. Serve immediately while the broth is hot.
