Grilled Chicken Skewers
Grilled chicken skewers are one of those recipes I come back to every summer. They’re simple to prepare and always a crowd-pleaser. It’s great for when you’re cooking for a backyard gathering or just making an easy weeknight dinner. Chicken thighs stay especially juicy on the grill, soaking up the spices beautifully while developing a light char on the outside.


Grilled Chicken Skewers
Tender chicken thighs marinated in a savory spice blend and grilled until juicy and lightly charred. Finished with a brush of barbecue sauce, they’re easy to make and perfect for summer cookouts or simple dinners.
Ingredients
- 1 1/2 lbs chicken thighs, cut into bite-sized pieces
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp cumin
- 2 tbsp avocado oil
- Japanese barbecue sauce, for brushing
Instructions
- In a large bowl, add the chicken thighs along with garlic powder, onion powder, cayenne pepper, salt, black pepper, cumin, and avocado oil. Mix well to evenly coat the chicken.
- Cover and marinate for at least 30 minutes.
- If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
- Thread the marinated chicken pieces onto skewers.
- Preheat the grill to medium-high heat. Grill the skewers, turning occasionally, until the chicken is fully cooked and reaches an internal temperature of 165°F.
- Brush the chicken with barbecue sauce during the last few minutes of grilling.
- Remove from the grill and serve warm.
