They’re spicy, garlicky, and a little tangy, with a sauce that comes together directly in the bowl. The hot oil brings everything together, blooming all the flavors before you toss it all with the noodles.

Chili Garlic Noodles

Chewy noodles tossed with savory sauces for a quick and flavorful noodle dish with plenty of heat.

Ingredients
 

  • 4 oz dry knife-cut noodles
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped scallions
  • 2 tablespoons light soy sauce
  • 1 teaspoon Chinese black vinegar
  • 1 teaspoon sesame seeds
  • 2 Thai chili peppers, thinly sliced (optional)
  • 1 tablespoon Sichuan chili powder
  • 2 tablespoons neutral oil

Instructions
 

  1. Bring a pot of water to a boil. Add the noodles and cook according to the package instructions until cooked through but still chewy, about 5 minutes. Drain well and transfer the noodles to a serving bowl.
  2. While the noodles are cooking, add the neutral oil to a small saucepan and heat until very hot and just beginning to smoke. You can also test the oil by dipping the end of a wooden chopstick into it. If small bubbles form steadily around the chopstick, the oil is ready.
  3. Add the minced garlic, scallions, light soy sauce, Chinese black vinegar, sesame seeds, Thai chili peppers, and Sichuan chili powder directly over the cooked noodles.
  4. Carefully pour the hot oil over the aromatics and chili powder. It should sizzle as it hits the ingredients.
  5. Toss everything together thoroughly until the noodles are evenly coated in the chili garlic sauce. Serve immediately.
