Egg Drop Soup
Egg drop soup is a true comfort food for me. It’s so simple yet incredibly satisfying. The silky broth is calming and soothing, while the delicate ribbons of egg add a subtle richness. It comes together in just minutes, making it a perfect weeknight meal or a soothing pick-me-up when I’m feeling under the weather.


Egg Drop Soup
This simple yet hearty Egg Drop Soup requires only a few ingredients and can be prepared in less than 10 minutes!
Ingredients
- 3 large eggs
- 1 tbsp water
- 4 cups unsalted chicken broth, vegetable broth, or water
- 1/2 tsp salt
- 1/4 tsp white pepper
- 1/8 tsp turmeric powder
- 1 tbsp sesame oil
- Scallions
- Cornstarch slurry: 2 tbsp cornstarch + 2 tbsp water
Instructions
- In a small bowl, crack the eggs and whisk them until well-beaten.
- In a soup pot over medium heat, add the chicken broth and season with salt, white pepper, and turmeric powder. Bring it to a light boil.
- Reduce the heat to low. Mix cornstarch with water and add to the broth. Stir until the broth thickens.
- Slowly pour the beaten eggs, gently stirring to help the eggs form into ribbons.
- Turn off the heat, drizzle sesame oil, and add scallions. Mix everything one last time.
- Garnish with more scallions and enjoy!
