Spicy Cucumber Salad
The perfect quick side dish or summer snack that’s light, crunchy, and full of heat.
Ingredients
- 5 – 6 mini cucumbers, sliced
- ½ tsp salt
- 6 Thai chili peppers, deseeded and finely chopped
- 2 garlic cloves, grated
- ½ tsp sugar
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1 –2 tbsp chili oil, adjusted to taste
- 1 tsp toasted sesame seeds
Instructions
- Slice the cucumbers and transfer them to a large bowl.
- Add salt and mix well. Let sit for 15 minutes to draw out moisture.
- Drain any excess liquid.
- Add Thai chili, garlic, sugar, rice vinegar, sesame oil, chili oil, and sesame seeds. Toss until evenly coated.
- Serve immediately, or chill for 10–15 minutes before serving for an extra-refreshing bite.
