In a bowl, combine ground pork, ginger, soy sauce, white pepper, salt, egg white, scallions, and heated oil. Mix until well combined.
Place a wonton wrapper in your hand and add 1 teaspoon of filling to the center. Lightly wet the edges with water, fold in half to form a rectangle, then dab one corner with water and fold the opposite corner over to seal.
In a separate bowl, mix all the chili sauce ingredients until well combined.
For fresh wontons, cook in boiling water over high heat for 3 minutes, stirring occasionally, until they float.
For frozen wontons, add them to boiling water, return to a boil, then add ½ cup cold water. Once it comes to a boil again, they’re done.
Transfer wontons to a serving bowl, spoon the chili sauce over the top, garnish with scallions, and enjoy.
