Fresh Fruit Sushi Rolls 

A refreshing, no-bake treat made with seasoned sushi rice and fresh fruit wrapped in soy paper. Light, colorful, and naturally sweet, they’re perfect for summer snacking or a fun dessert.
Prep Time: 20 minutes

Ingredients
 

  • Dragon fruit, peeled and thinly sliced
  • Peach, thinly sliced
  • Strawberries, hulled and thinly sliced
  • Cooked sushi rice
  • Soy paper wraps

Instructions
 

  1. Cook the sushi rice according to package instructions. While warm, gently fold in rice vinegar to season. Let cool to room temperature.
  2. Thinly slice the dragon fruit, peach, and strawberries.
  3. Place a soy paper wrap on a clean, dry surface.
  4. Wet your hands and spread a thin, even layer of sushi rice over the soy paper, leaving about 1 inch uncovered at the top edge.
  5. Arrange the sliced fruit across the rice, slightly overlapping for color and balance.
  6. Starting from the bottom, roll the sushi tightly but gently, tucking the fruit and rice in as you go.
  7. Use a sharp knife to slice into bite-sized pieces. Serve immediately.
