A classic takeout-style noodle dish that comes together quickly in the wok and delivers a comforting, satisfying bowl of noodles that feels just like your favorite restaurant version, but made at home.
2stalks scallion, chopped and separate white and green parts
3oznapa cabbage, thinly sliced
2ozportabella mushrooms, thinly sliced
Beef Marinade:
8ozflank steak
1tsplight soy sauce
1tspShaoxing wine
1/4tspbaking soda
1tspcornstarch
1tspoil
Sauce Mixture:
1tbspoyster sauce
1tbsphoisin sauce
1tbsplight soy sauce
2tbspwater
1 -2tbspchili oil, optional
Instructions
Marinate the beef for 15 minutes. Blanch the noodles in boiling water for 2 minutes, then drain under cold water to stop the cooking process.
Add 2 tbsp oil to a heated wok and add the beef. Cook until 80% cooked. Transfer out and set aside.
Add the remaining tbsp of oil to the wok and add garlic, white part scallion, napa cabbage, and mushrooms. Cook until the vegetables are wilted, about 3 minutes.
Add the noodles and pour in the sauce. Mix until the sauce is fully absorbed.
Add the beef back, and toss everything together.
Turn off the heat and add the green parts of scallions.
