Creamy Chicken Ramen
Instant ramen is one of those things I almost never eat completely as is. Even when I’m starting with a simple pack of noodles, I like adding a few ingredients to make the bowl feel more complete, and this creamy chicken ramen is one of my favorite ways to do it. The broth is creamy without needing any cream or milk, the noodles stay nice and chewy, and the spicy minced chicken on top adds a savory kick that works really well with the richer broth.


Creamy Chicken Ramen
Ramen noodles served in a rich and creamy broth and topped with spicy minced chicken, a soft-boiled egg, scallions, and chili oil.
Ingredients
Spicy Chicken
- 5 oz minced chicken
- 1 teaspoon grated garlic
- 1 scallion, white part chopped
- 1 teaspoon doubanjiang, or to taste
- 1 teaspoon soy sauce
- Neutral oil, as needed for cooking
Creamy Ramen
- 1 pack instant ramen noodles
- 1 egg yolk
- 1 tablespoon Kewpie mayonnaise
- 1 teaspoon grated garlic
- 1 teaspoon chicken ramen seasoning
- 1 cup hot water
For Garnish
- Chili oil, optional
- 1 soft-boiled egg
- Chopped scallions
Instructions
- Heat a small amount of neutral oil in a skillet over medium heat. Add the grated garlic and chopped scallion and cook briefly until fragrant.
- Add the minced chicken and cook, breaking it apart as it cooks, until no longer pink. Add the doubanjiang and soy sauce and continue cooking until the chicken is fully cooked and evenly coated. Remove from the heat and set aside.
- Bring a pot of water to a boil and cook the ramen noodles according to the package instructions, or for about 4 minutes, until cooked but still chewy. Drain the noodles.
- Meanwhile, add the chicken ramen seasoning, egg yolk, Kewpie mayonnaise, and grated garlic to a serving bowl. Mix thoroughly until smooth and well combined.
- Gradually pour 1 cup of hot water into the bowl while stirring continuously until the broth is smooth and creamy.
- Add the cooked ramen noodles to the broth and top with the spicy minced chicken.
- Finish with a soft-boiled egg, chopped scallions, and a drizzle of chili oil, if desired. Serve immediately.
