I absolutely love onigiri, especially with Spam filling. It’s different from traditional fillings, but the savory and caramelized Spam pairs so well with the fluffy rice. I used to visit my local boba shop to get their Spam onigiri, which comes with the nori wrapped in plastic to keep it fresh and crisp until you’re ready to eat it. Recently, I found these same onigiri wrappers at my local Asian market, and I knew I had to try them out.

Spam Onigiri

A grab-and-go rice ball inspired by Japanese convenience stores with savory spam layered with fluffy rice and wrapped neatly in nori.
Prep Time: 15 minutes
Cook Time: 15 minutes

Ingredients
 

  • 1 can of spam
  • 2 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 2 cups cooked sushi rice
  • Store-bought onigiri wrappers

Instructions
 

  1. Slice the spam in half and then into thick pieces.
  2. In a bowl, mix the low sodium soy sauce, rice vinegar, and sugar until the sugar is dissolved.
  3. Heat a skillet over medium heat. Place the spam slices and cook for about 2-3 minutes on each side until they are golden brown.
  4. Pour the soy sauce mixture over and let it cook for an additional 1-2 minutes, allowing the spam to absorb the flavors. Remove from heat and let it cool slightly.
  5. Wet your hands and the inside of the onigiri mold with water to prevent the rice from sticking.
  6. Place a scoop of rice into the mold, filling it about halfway.
  7. Add a slice of spam on top of the rice layer in the mold.
  8. Add more rice on top, filling the mold to the top.
  9. Press down firmly to form the onigiri shape.
  10. Take an onigiri wrapper and follow the instructions on the package for wrapping.
